Regional Cost Controller based in New York, United States, reporting to the Procurement and Finance teams. The role supports local kitchen, bar and operations with recipe, cost and inventory management and ensures the Purchasing System (Adaco) is accurate and up to date and linked with our MICROS revenue system. Over time the role will expand to support Food, Beverage and Variables categories across procurement activities including system management, vendor setup and invoice management, cost control, spend analytics, contract review and governance. Key responsibilities include maintaining Adaco administration, ensuring cost prices and purchase codes are accurate, creating recipes in Adaco linked to MICROS, and reporting missing PLUs and recipes weekly. You will review global and local recipes with departments, regularly clean up the F&B product database, correct data and advise site management on data integrity, and provide monthly Adaco training. You will analyze cost of sales against budget, perform cost and scenario analyses and benchmarking, monitor price ceilings and competitor activity, and analyze purchases, losses, theft and wastage. You will liaise with Finance to implement timely adjustments in Adaco and Sage, support the backup process for missed invoices, and conduct weekly spot checks on orders, deliveries and invoices. You will oversee weekly Bev inventory and quarterly variable inventory for select lines, maintain accurate variable par levels, and propose actions to reduce waste and purchasing costs.
